Who doesn't love meatballs? They're hearty, filling, and packed with protein -- and in this version, veggies too (and none of the extra filler that makes you feel heavy, like breadcrumbs)! We first made these when my cousin Jason was in town about a month ago. He provided us with the amazing sauce recipe which you can make while the 'balls cook in the oven.
PS. This is one of those dishes that tastes even better the next day when reheated, so don't worry if you have leftovers -- which you most likely will if you're making this for just yourself or one other.
